Recipe Thursday

As promised, I wanted to post the recipe for one of my favorite meals - zucchini pie. I think I posted this already a while back, but here it is again, with pictures. It is AWESOME, and a great way to use up those ginormous zucchinis from your garden.

Zucchini Pie


4 cup thinly sliced zucchini
1/2 cup chopped onion
1/2 cup margarine
1/2 cup chopped parsley or 2 TB parsley flakes
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp basil
1/4 tsp oregano
2 eggs
2-3 cup mozzarella cheese
1 small can mushrooms
8 oz can crescent rolls

Cook and stir zucchini, onion, and margarine in pan 10 minutes














Stir in parsley, salt, pepper, garlic powder, basil, oregano
In large bowl, beat eggs. Add mushrooms and mozzarella cheese. Stir in zucchini mixture.
Separate crescent rolls and place triangles into pie plate to form crust on bottom and sides of pan. Pour zucchini mixture into pan.














Bake 375 degrees for 20 minutes or until center is set. Cover crust with foil for last 10-15 minutes of baking. Let stand 10 minutes before serving.

Recipe Thursday!

One of my favorites!

Salsa-Chicken Quesadillas

1/2 cup salsa
2 TB Miracle Whip
1/2 tsp chili powder
8 small tortillas
1 lb grilled chicken breast
1 small bag Mexican shredded cheese
some margarine/butter

Combine salsa, Miracle Whip, chili powder, and chicken in bowl, set aside. Spread margarine evenly on 1 side of each tortilla. Place 1 tortilla in hot frying pan, butter side down. Quickly spread salsa mixture and cheese on tortilla, lay second buttered tortilla on top, butter side up. Cook about 1 minute, moving pan around to help prevent sticking, then use a spatula to flip tortilla. Continue flipping until both sides are lightly toasted. Repeat to make more quesadillas. Use pizza slicer to cut into slices.

YUM!

Note ~ We use a small dinner plate to help flip tortillas.

Recipe Thursday!

I borrowed this recipe from Kraft's Food & Family magazine a while back. I love this magazine, and it's free - if you don't already get one, go to Kraft's website to subscribe, because there are tons of good recipes in each issue, which comes quarterly! This recipe is fun and kid-friendly. And yummy too!

Bacon Cheeseburger Roll-ups

1 lb ground beef
4 slices bacon, crumbled
1/2 cup chopped onion
3 oz Velveeta, cubed
1 pkg pizza dough (13.8 oz)

Cook ground beef, bacon, and onion until browned, then drain. Add Velveeta, stir into meat until melted. Unroll pizza dough to a 15 x 8 rectangle on sprayed cookie sheet. Top dough evenly with meat mixture. Roll dough long-ways. Bake 20 minutes at 400 degrees. Slice roll into slices to serve.

Matching PJ Pants

I am loving Emmy and my matching PJ's.

It's been kinda busy lately. I'll try to post an update soon!

I did want to say that my friend Kate has announced that Thursdays will now be "Recipe Thursdays" for anyone who wants to join in. I don't necessarily love cooking, but I do have to cook a lot, so I have a few yummy recipes, and I am always looking for new ideas for variety.
I am becoming so domestic, it is a bit scary.
